Tasting is Believing
We have now set up a booth and sold our microgreens at the Topeka Farmer’s Market for several weeks now, and have learned something very interesting, but not entirely surprising. Most people just walk by our booth, make a quick glance or ignore us altogether, then walk on without taking a closer look. On our first Saturday, after observing an hour or two of this lack of interest, we decided to more actively engage our potential customers. We asked passers-by if they wanted to try a free sample of our microgreens, and to our delight, almost half of them said that they would. We asked others if they had ever heard of microgreens, and most of them responded in the negative, after which we would explain that they are simply the seedlings of vegetables and herbs which have been allowed to grow for 7 to 21 days, depending on the microgreen.
From this experience we learned that once we educated the Market patrons regarding our product, and they discovered that microgreens were both delicious and nutritious, we soon had numerous customers interested in our sunflower, pea, radish, broccoli, and cauliflower shoots. In fact, we have essentially sold out every Saturday. Many of them thanked us for stopping them to offer samples of our shoots and inform them of the wonderful flavor and incredible health benefits of microgreens. They were intrigued to learn that microgreens contain 4 to 40 times higher concentrations of vitamins, minerals, and phytonutrients than their mature plant counterparts.
