Pea Shoot Salad

Prep time: 5 Min. ¦ Serves 2

 

INGREDIENTS

2 cups lightly chopped pea shoots

1/4 – 1/2 cup sunflower shoots

2-4 Tbs. radish microgreens

2-4 Tbs. broccoli o cauliflower microgreens

1 egg diced or sliced

1-2 Tbs. shredded cheese (your favorite)

6 flavor bomb cherry tomatoes

2 tsp. lime infused olive oil

2 tsp. raspberry balsamic inegar

 

DIRECTIONS

Layer salad ingredients in order as listed. Drizzle with oil and vinegar. Enjoy!
