Borage

Borage microgeens have a fresh cucumber like taste that is a great addition to salads and light soups among other dishes. While their taste is similar to cucumber, their texture is quite different. The leaves have tiny microscopic hairs and while crisp are not juicy like cucumber. They are flavor packed and a little is just right to add that cucumber taste to just about anything. They can even be steeped and used as a refreshing beverage.

Borage has been used for fever, cough, sore throat, depression, upset stomach, and as an anti-inflammatory, and blood purifier. It is high in:

Vitamin A – a powerful anti-oxidant essential for vision and for maintaining healthy mucosa and skin

Vitamin C – an anti-oxidant that helps remove harmful free radicals from the body, has immune boosting, wound healing and anti-viral effects 

Carotenoids – antioxidants that aid in lowering inflammation and improving cardiovascular health, help protect cells from free radicals and may be able to prevent cancer growth

Iron – a component of hemoglobin inside the red blood cells that determines the oxygen-carrying capacity of the blood

Niacin (vitamin B3) – helps lower LDL cholesterol levels in the body, and along with riboflavin, thiamin, pyridoxine, and folates which are also found in borage, functions as a co-factor in enzymatic metabolism.
