Microgreen Scramble

Temp. Medium ¦ Prep time: 7 min.

¦ Cook time: 6-8 min. ¦ Serves 2

 

INGREDIENTS

1/3 cup diced yellow or green onion

1/4 sweet bell pepper

1 cup sliced mushroom

4 large eggs

1-2 Tbs. crumbled bacon

1/2 cup lightly chopped pea shoots

1/2 cup sunflower shoots

2 Tbs. broccoli microgreens (or other)

2 Tbs. radish microgreens (or other)

Salt

Pepper

 

DIRECTIONS

Heat an oiled or non-stick skillet

to medium. Add butter, onion, and bell

pepper. Sauté for one minute. Add

mushrooms and continue to sauté

until mushrooms release their juices.

Crack eggs into pan and let set for 20

to 30 seconds. Scramble with a fork or

spatula to mix thoroughly. Add bacon

and stir again cleaning the sides and

bottom of the skillet.  While eggs are

still partially liquid, add microgreens

and fold to combine. Remove

from heat before eggs lose their

sheen. Let sit for one to two minutes

to finish cooking. Add salt and pepper

as desired. Enjoy!
